As one of the common pharmaceutical intermediates, Glucolactone is white crystalline or crystalline powder, odorless, taste first sweet and then bitter, sour. The melting point is 160℃. Soluble in water (room temperature, 60g/100mL), slightly soluble in ethanol (1g/100mL), insoluble in ether. Hydrolyzed to a balanced solution of gluconic acid and lactone in aqueous solution, the pH value of the newly formulated 1% aqueous solution is 3.5, and becomes 2.5 after 2h.

Tofu coagulant
Using GDL as a protein coagulant to produce tofu, tofu texture is white and tender, without bitterness of brine or gypsum, no protein loss, high tofu yield, and easy to use. In view of the fact that when GDL is used alone, tofu has a slightly sour taste, so GDL and CaSO4 or other coagulants are often mixed according to the ratio of 1:3 to 2:3, and the dosage is 2.5% of the weight of dry beans, and the temperature is controlled at about 4℃.
Milk gelling agent
Mainly used in the production of yogurt or cheese, in industrial use, the gel strength of the milk formed by GDL acidification is about 2 times that of the fermentation type, and the amount of the product can reach the required curd pH after adding 0.025% ~ 1.5% in the milk. The structure of the milk gel prepared by adding 3% and holding at 30℃ is similar to that prepared by lactic acid fermentation.
Quality improvers
GDL can be used in canned lunch meat and ground pork, which can increase the effect of hair color agent, thereby reducing the amount of nitrite, which is more toxic. At the same time, GDL also has emulsifying effect and anti-corrosion effect, so as to improve the quality of canned minced meat, and its maximum dosage is 0.3%.
Acidifying agent
GDL can be added to sweet sherffles and jellies such as vanilla extract, chocolate, bananas, and is the main acidic substance in the compound leavening agent, which can slowly produce carbonate gas and can produce special flavor pastries.
